Microgreen Nutritional Info

  • In the summer of 2012 Dept of Nutrition & Food Service, the University of Maryland did a nutritional research study that microgreens indeed have particularly high nutritional value compared to mature vegetables.

  • The more intense the color, usually the more nutritious.

  • In 2014 the USDA Agricultural Research Service did research studies on the nutritional make up and the shelf life of microgreens. 25 varieties were tested. Key nutrients measured were: Vit C, Vit E, Vit K, and Vit A. Red Cabbage, Cilantro, Garnet Amaranth, Green Daikon Radish had the highest concentrations of Vit C, Vit K, and Vit E.
