In the summer of 2012 Dept of Nutrition & Food Service, the University of Maryland did a nutritional research study that microgreens indeed have particularly high nutritional value compared to mature vegetables.
The more intense the color, usually the more nutritious.
In 2014 the USDA Agricultural Research Service did research studies on the nutritional make up and the shelf life of microgreens. 25 varieties were tested. Key nutrients measured were: Vit C, Vit E, Vit K, and Vit A. Red Cabbage, Cilantro, Garnet Amaranth, Green Daikon Radish had the highest concentrations of Vit C, Vit K, and Vit E.
