Seasonal Grilled Cheese
This time of year offers the best time for a seasonal grilled cheese sandwich with garden-fresh tomatoes and onions. It is a simple and satisfying meal, and we hope you enjoy this seasonal favorite!
Ingredients:
Sliced Sourdough Sandwich Bread
Onions, sliced and garden fresh
Tomatoes, sliced and garden fresh
Cheese of your choice, sliced (We like Pepper Jack!)
Butter for the onions and bread
Basil or other herb of choice, if desired
Instructions:
Slice the onion and lightly fry them in butter. Brown them as much as you want. We prefer to have a little crunch still.
Butter the side of the bread that will be grilled.
Put slice of bread (butter side down) on a pan or griddle, then layer the following: grilled onion, sliced cheese, and sliced tomato. Cover with a slice of bread (butter side up).
Cook the sandwich. We flip after the 1st side is brown, and then brown the 2nd side. We also like to weigh down the sandwiches with a lid as each side browns, which helps the melting cheese adhere to the other ingredients. (Our farm’s artist taught us to do it this way!)
Once melted to your perfection, remove from heat and serve!
Serve the grilled cheese with a few leaves of fresh basil or other herb, if desired.
