Recipe for Sunny Salad

Dear Farm Friends,
 
The earthy brown colors are slowly awakening to shades of green. Sunshine and rain are inviting new growth. Our garlic has poked through the ground and the layers of leaf mulch. We started pruning our apples trees and have six of the 80 fruit trees done. The songbirds are cheerfully singing and building their nests. The white swans and sandhill cranes are landing in our neighbor’s farm fields where the swollen riverbanks are a refuge for migrating birds. The robins are chirping, and their keen eyes are spotting the tiny end of a worm as it pokes out of the soil. The snowdrops are in full bloom and our daffodils and hyacinth almost ready to show their bloom.

Yes, spring is here full of color and life.

Weekly Micros

Delivery Days: Tuesday, April 7 and Thursday, April 9 (Minimum order of $25)

Mild Micro Mix

Includes the following varieties: broccoli, kale, sunflower, pea, cabbage, mizuna (mostly green with a touch of color) available in a $5 and $10 size.

Red & Purple Mix
An antioxidant mix with purples & reds and includes Red Cabbage, Red Russian Kale, Purple Rambo Radish, Red Beet, Purple Kohlrabi
 

Micro pea shoots

Fresh and sweet with a green pea flavor. These are great to add to a salad or sandwich, or as a flavorful garnish to any dish.

Early Spring Mix

The first of the spring greens with sorrel (a lemony flavor) from our gardens and with chicory microgreens all added to the Mild Micro Mix.

Micro Sunnies

These have a nutty, sunny flavor to add to your salad or sandwich or smoothies.

"Sunny Salad" Recipe

  • Sunflower shoots

  • Toasted Sunflower seeds

  • Shredded red or green cabbage and carrots

  • Dijon Vinaigrette Dressing

Combine and toss the dressing! You can add arugula or lettuce too if you like.
