Apple Fennel Salad

 

This is a fall salad that our family has enjoyed for years. It’s simple, and has a unique flavor combination. When Farmer Caryl makes it, she adds more celery. When Farmer Tara makes it, she adds more fennel. Use the below recipe as a guideline.

Ingredients:

  • 2 large apples or 3-4 small apples, cut

  • 1/2 to 2/3 cup chopped celery

  • 1/2 to 2/3 cup chopped fennel, stalks and/or fronds

  • Honey mustard dressing, or your choice

Instructions:

  1. Cut or chop all ingredients.

  2. Combine in bowl and mix.

  3. Add dressing and gently stir.

  4. Sprinkle with fennel fronds.

  5. Serve.

Dressing Option:

Rather than adding dressing to the whole bowl, allow each person to add their own dressing to individual servings. We prefer this serving method.
