Apple Fennel Salad
This is a fall salad that our family has enjoyed for years. It’s simple, and has a unique flavor combination. When Farmer Caryl makes it, she adds more celery. When Farmer Tara makes it, she adds more fennel. Use the below recipe as a guideline.
Ingredients:
2 large apples or 3-4 small apples, cut
1/2 to 2/3 cup chopped celery
1/2 to 2/3 cup chopped fennel, stalks and/or fronds
Honey mustard dressing, or your choice
Instructions:
Cut or chop all ingredients.
Combine in bowl and mix.
Add dressing and gently stir.
Sprinkle with fennel fronds.
Serve.
Dressing Option:
Rather than adding dressing to the whole bowl, allow each person to add their own dressing to individual servings. We prefer this serving method.
