Asparagus Salad
Every spring, we look forward to enjoying this simple salad with fresh spring ingredients.
Ingredients:
1 pound asparagus
Big handful of Chive Flowers
1-3 Spring Onions, depending on how “oniony” you want the salad
Other Spring Flowers, add as available:
Johnny Jump Ups
Broccoli Florets
Onion Flowering Heads
Dressing of choice
Instructions:
Chop asparagus to be bite-sized pieces.
Blanch and cool the cut asparagus.
Chop the onions.
Pull apart the chive flowers (and other spring flowers, if using).
Mix the asparagus, onions, and flowers just before serving.
Serve and let each person add their own dressing.
Notes:
Our favorite dressing to use with this salad is an equal mixture of vinegar, oil, and sweetener.
If you need a salad for a picnic, you can add dressing to the whole salad just before serving.
