Italian Zucchini Soup

A BrynTeg Farm recipe! It’s another one of our family’s favorites.

Ingredients:

  • 1 lb. bulk Italian sausage or plain pork sausage

  • 1 c. onion, chopped

  • 2 c. celery, chopped

  • 1 med. green pepper, chopped

  • 2-4 T sugar (optional)

  • 2 tsp. salt

  • 1/2 tsp. dried basil

  • 1/2 tsp. dried oregano

  • 1/2 tsp. ground pepper

  • 1 qt. fresh or canned tomatoes, chopped up, not drained

  • 4 c. zucchini, diced

  • grated parmesan (optional)

Directions:

In a Dutch pan, brown sausage with onion, drain fat. Add next 8 ingredients, cover and simmer 1 hour. Stir in zucchini and simmer 10 minutes. Sprinkle with Parmesan.
