Apple Coffee Cake

 

This has been one of our family’s favorite recipes for the last 25+ years. We use BrynTeg Farm apples, of course!

Cake Ingredients:

  • 1 cup melted butter

  • 1 cup sugar

  • 1/2 cup brown sugar

  • 2 eggs

  • 1 cup buttermilk

  • 1 tsp. baking powder

  • 1 tsp. basking soda

  • 1/2 tsp. salt

  • 2 tsp cinnamon

  • 2 1/2 cups flour

  • 2+ cups diced apples


Topping Ingredients:

  • 1/2 cup chopped nuts (Your choice of walnuts, pecans, almonds, etc.)

  • 1/2 cup sugar

  • 1 tsp. cinnamon


Directions:

Preheat oven to 350°

Grease an 13 x 9 x 2 inch pan. Mix cake ingredients in order given. Add apples last. Pour batter into the greased pan. Smooth and even out batter in pan. Sprinkle chopped nuts on top of batter. Mix in a small bowl the sugar and cinnamon for the topping. Sprinkle mixture on batter. Bake for approximately 40-50 minutes, longer if necessary, until toothpick comes out clean.



Alterations and Substitutions:

  • Want a smaller cake(s)? Bake in loaf pans. Or cut the ingredients in half and bake in a smaller 8x8 pan.

  • Need a substitute for buttermilk? Add a spoonful of vinegar (or apple cider vinegar) to 1 cup of almond milk. Let sit for about 10 minutes before adding and mixing to cake batter.

  • Have extra apples? Double, triple, or quadruple the amount of diced apples. You’ll need to watch the baking time, as it may take slightly longer to completely bake.

  • Add fresh Cranberries! Every fall, we have fresh Cranberry’s from Ruesch Century Farm. The cranberries add a festive spin to the coffee cake.
