Swedish Apple Cake (or Pie)
We used Einkorn for this topping.
A family member shared a similar recipe with us, but we revised it a bit to fit how we like to bake. We hope you enjoy this delicious and simple dessert as much as we do. Happy baking!
Pie Filling Ingredients:
6 (approximately) BrynTeg apples, mixture of your choice
1 tsp ground cinnamon
This pie used white flour. You can tell that each grain type will give a different texture and flavor.
Topping Ingredients:
1 cup flour (white flour, einkorn flour, granola, or other grain choice)
1/2 cup cane sugar
1/2 cup butter, melted (plus, butter for spreading in the bake dish)
1 egg
pinch of salt
Instructions:
Preheat oven to 350° degrees.
Butter the pie plate or bake dish.
Peel, core, and slice apples (to whatever thickness you prefer).*
Fill the pie plate or a bake dish 2/3 full with sliced apples.
Sprinkle the cinnamon on the apples in the baking dish.
Cover with a lid or aluminum foil.
Bake for 45 minutes, approximately, until apples are baked through and starting to get bubbly.
While the apples are baking, combine the topping ingredients.
Remove the baked apples from the oven and remove lid.
Spread the topping evenly over the apples.
Put back in the oven without the lid and bake for 1 hour, approximately, until the top crust is lightly browned.
Serve warm or enjoy later.
Notes:
We like to use a mixture of both baking and eating apples.
*Keep the peels on the apples. Just make sure to wash the apples.
Some people don’t like to have two baking times. Rather, you can do it all at once. We prefer the two-bake method.
Adjust the temperature of your oven based upon how it heats.
